We have been watching Stanley Tucci's Searching for Italy on CNN and each episode has several easy pasta recipes that look amazing! We have tried the Spaghett alla Nerano (Spaghetti with zucchini) and the Cheesy Pecorino / parmigiano reggiano recipe that was also amazing! I think one of our favorites was the Carbonara.
We use the 'fresh' pasta in the refrigeration isle of the grocery store and for this recipe, there were only
2 Egg yolks
Chop the bacon into pieces and cook leaving half of the bacon fat for flavor. Cook the pasta to al dente. Turn off the heat on the pan with the bacon. Place the pasta - with some of the pasta water into the frying pan with the bacon. Add Pepper and 1/2 cup finely grated parmigiano reggiano cheese. Then, stir in the 2 raw egg yolks quickly. Then move into a bowl and top with fresh ground pepper and more grated parmigiano reggiano! Delish!
